Shortbread mini muffins are in the house... AGAIN! .
This is my second batch in a week 😬 but that's ok cause it's school holiday's right? AND the husband is home! #sharingiscaring .
I saw this recipe made into shortbread cookies over @letsfindbalance and I HAD to make them, so thank you Ale! 🙏
SHORTBREAD MINI MUFFINS
1 cup almond meal
3 tbsp almond butter
2tbsp cacao powder
1tbsp coconut oil
1tbsp maple syrup
pinch salt .
Mix all ingredients together (kids did this with a fork).
Rest in fridge for 30mins.
In a small silicon muffin tray (spray with coconut oil) scoop mixture and then press down ingredients using your finger or spoon.
Add dark choc chips to top and cook for 12mins approx.
Use fork to spread out chocolate.
Allow to cool before inhaling 😉
INTUITION 💫 .
Hard to believe that this time 6 years ago I was in preterm labor. .
Physically I knew something wasn’t right, however being a first time mum I trusted my Obstetrician who I went to see and she told me what I was experiencing normal pregnancy symptoms. I never spoke up, I never questioned her insight and I never looked into things further myself. 🙈 I just began to ignore my symptoms, assuming they were normal and went on with my everyday life… even flying out of town for work as I was given clearance to fly. .
I’ll be honest and say after everything that happened my trust in the medical word was rattled as I realized they too, were only human. But it was from this point, I found my inner voice to speak up, to trust my intuition and back myself more than I ever have in my life. My only wish was that I had found this sooner because maybe things could have been different. .
We all know hindsight is a wonderful thing but when we share our knowledge and experiences, we may change the path for someone else. 🙏 People learn from others in life, in all aspects.. their success and achievements but also their misfortune and heartache! .
My lesson to you is this… TRUST YOUR GUT. .
That inner voice that keeps pestering you, that uneasy feeling in your tummy, listen!! Keep asking questions, don’t let it rest EVEN when you are told otherwise until YOU feel at peace. .
LISTEN to yourself
Ask questions… seek your own information.
And always TRUST your intuition, For it is one of the most powerful things you have! 💫

Wanted to share our STRAWBERRY JAM recipe from our program as it's a good reason to stock up on the berries! 🍓 🍓 🍓 .
Store bought and even home made jams can be a hidden source of excess sugar. You will be surprised to see just how quick and easy it is to make your own healthier version!
1 heaped cup strawberries (chopped)
Squeeze of fresh orange juice
1-2 tsp preferred sweetener to taste (honey, rice malt or maple syrup recommended)
1 heaped tsp chia seeds
🌿Place berries and a good squeeze of half an orange in a small saucepan. .
🌿Gently simmer, mashing berries with a fork to desired consistency, until syrupy- about 5 minutes. Add sweetener to taste and stir through chia seeds. .
🌿Transfer to a jar and place in the fridge until cold. The Chia seeds will give it a thick jam texture.
Use whole or ground chia depending on texture preference. I used whole.

Trust me, I have tried it all.... and yup I have failed time and time again. The most frustrating time of the day (particularly when I am solo parenting) is dinner time! It can be a battle... a tiring endless flippin battle! #thesebattlescars 😜
I would class us a healthy family doing our best to live a low-tox healthy lifestyle however we are not perfect. .
BUT.. there is a but. .
But I have found a way to bridge the gap. Between what they eat and should be eating
with our wholefood natural chews which are herbicide and pesticide free. This has helped me, help them..support their immune system and flood their bodies & cells with beautiful wholefoods, over 17 varieties in fact a day! .
Veggies like kale, broccoli, beetroot, spinach 🥦 and fruits like cranberry, pineapple and cherry 🍒... wholefoods that I cant yet get him to eat but know now he gets all the micronutrients this way.

This is a great cookie recipe to get the little people involved in over the weekend... it's simple, quick and takes no time to cook!
Perfect for afternoon tea! 👌
2 cups of almond flour
1/3 cup of dark chocolate chips
1/2 cup mashed banana
1/4 cup coconut oil
1tsp pure vanilla extract
Mix all ingredients into bowl
Fold in the chocolate chips
Spoon 1tsp batter onto baking sheet
Bake 10-12 mins

How are we meant to look after somebody else when we dont look after our own health?! LIGHT BULB MOMENT .
I know I am a better mum because I feel better. I am also a better friend and wife. I make more of an effort because the fact of the matter is, I feel better! 🌞 I sleep better, I have more energy and I want to do stuff, go places and be present! .
I no longer feel like I am drowning in sleep deprivation and coffee. I no longer feel like I am dragging my feet when I wake in the morning. .
If those of you who told yourself this year was the year... nothing changes if nothing changes! .
I made some small consistent changes this year.
I made it a priority for myself and guess what? My whole family wins from it! .
