We believe the future is with women (and bugs), and strongly support and embrace gender equality and matriarchal values. We love that there are so many incredibly smart, talented female leaders in the ento-community and are proud to be a part in supporting their endeavors. A very special thank you to the women who I had the great privilege to work with and who volunteered and attended @eatinginsectsathens.
I am very fortunate to have had strong, intelligent, and beautiful female role models throughout my life, starting with my mom, sister, and wehalmonee (grandmother). My wehalmonee recently passed away, and there is a very special place in my heart reserved only for her. I had the fortune to visit her every day the last week she was with us. The night before she passed away, she raised both her hands in the air repeatedly saying hallelujah with me.
I embrace this strength, will, and determination, and draw great inspiration from her to try to be my very best, to leave nothing behind, to raise both my hands with a victorious hallelujah, and to embrace the future—of female leadership and edible insects.
I vow to treat everyone equally, regardless of their gender or gender identity, and to maintain an inclusive community that welcomes everyone to @brooklynbugs.
Very truly yours, Executive Director - Chef Joseph Yoon
Big mixed bowl of leftovers and some buggy toppings—red termites, weaver ants, and palm weevils (thanks @entomarket). Leftovers were jasmine rice, cocktail shrimp, tempura cod, four mushroom ceviche (white button, shiitake, enoki and oyster), veggie chili, cider slaw, and gochujang sauce. Yummy #brooklynbugs
We mostly served cooked dishes during the @eatinginsectsathens conference events, but we thought it’d be fun to present the most amazing #bugbar for attendees to try a wide variety of flavors (some which we also tried for the first time)! Big thanks to our title sponsors @entomarket, and @entomofarms, @mercimercado_us, and to our participating sponsor @chirpschips for their kind donations.
There is a reason why @entomarket is our title sponsor-look at all the bugs that Bill brought for us, in addition to all the ones we packed in our own bags! It was particularly even more meaningful that we share similar life philosophies and are becoming better friends with each passing day! Thank you! #eatinginsectsathens#brooklynbugs
Part 2/2: Thank you to everyone who attended our @eatinginsectsathens events throughout the week, and a very special thank you to all our presenters, speakers, artists, and award winners.
Thank you to @universityofga@botanicalgarden_ga for hosting this conference and for giving us the space and hospitality to spread our wings.
A chef is only as good as their ingredients, and to my incredibly supportive sponsors, a very bugging thank you to our title sponsor @entomarket, and to @entomofarms , @mercimercado_us , and to our participating sponsor @chirpschips.
A very special thank you to the members of the planning committee: our fearless Queen Bee @drbugappetit, @little.herds, Julie, Jeff, and to whom I consider my counterparts in the Fantastic Four—Cheryl, Valerie, and @entomocentral . Your selfless work and commitment to make this the best conference possible is commendable and heartwarming. There were times where someone could’ve complained or become negative, but the manner in which we overcame challenges, and did whatever we could to make this as wonderful an experience for others was simply delicious.
My humble thanks, love, commitment, and gratitude, Joseph Yoon #eatinginsectsathens#brooklynbugs
Part 1/2: What’s the most glorious movie ending you can think of—“Chariots of Fire”, or maybe “Shawshank Redemption”? Maybe “When Harry Met Sally” or “Pretty Woman”? Whatever it is, that euphoric feeling is what has been running through every fiber of my being as I process what has been the most rewarding week of my life at @eatinginsectsathens .
The convergence of academics, scholars, farmers, business and thought leaders, chefs, students, freaks and scientists gave the conference a great deal of color, and is what I believe gives us our strength. Much like how America has thrived on diversity, I believe that our vast backgrounds and experiences will be what will allow our industry to grow and create the impact to change the perceptions from insects as a pest, to edible insects as a delicious, nutritious, and sustainable source of food.
When I looked around the conference, there were the cool kids, the nerds, the geeks, and the alternative kids—the beautiful thing is that none of it mattered. The feeling of inclusiveness and the desire to see our collective vision succeed usurped anything else. After speaking with a large sampling of the attendees, and the planning committee, I felt a resounding positive note and uplifting optimism permeated each and every individual.
I had the honor and privilege to cook for hundreds of people over a variety of events through the week, and while it was completely exhausting, it was worth the figurative blood, and literal sweat and tears.
There is a lot of work ahead, but it is with a powerful sense of confidence and optimism that we all take this next leap together. I had the honor to meet industry leaders who I have long held in high esteem—it was humbling to discover that they were fans of my work, especially when they expressed interest in working together. A few professors said that they have already ear marked money to conduct extensive research with me this year. For all the work and sacrifice I’ve invested, it is extremely gratifying to experience the incredible returns and rewards from this conference...end part 1/2.
“What you are saying, is exactly what I feel in my heart,” Dr. Florence Dunkel.
My heart exploded after I serendipitously ran into Dr. Dunkel late in the night while taking a break for a grant application that is due tomorrow morning...we ended speaking for nearly an hour, discussing the questions I had regarding the application, sharing our philosophies on life and education, identifying specific long term goals of what we’d like to achieve working together, waxing poetic, and openly stating our mutual fan-like appreciation of one another’s work.
I am humbled again and again, and honored to share my point of view and passion of edible insects among the architects, queens, and leaders of the blossoming industry. No tears today, although I choked up and held back tears a few times during an interview.
A lot more forthcoming, but for now, I need nothing more, not a single iota of anything, to feel immensely rewarded for the culmination of my life’s work, and dig even deeper to continue dedicating my life to this cause. Lovingly, Joseph #eatinginsectsathens#brooklynbugs
