It just o-curd to me that I'm soy in love with tofu! 🤤 + Garlicky Peanut Noodles with Egg Tofu | Okay, I lie, it didn't just occur to me but I wanted the double puns. 😅 I've loooooved tofu for as long as I can remember. My mom said I was practically a vegetarian when I was little, partially because of my grandparents' influence who took care of me a lot while my parents worked. I love that it's a very versatile product and there are no bones to pick lmao so it's easy to eat. Anyhow, here's the recipe cause I wasn't lazy this time! + Ingredients: 2 tbsp Sesame Oil 1.5 tbsp Rice Vinegar 2 tbsp Peanut Butter 2 tbsp Soy Sauce 2 tbsp Honey 1 tbsp Tahini (optional) 1 Garlic Clove 1.5 tsp Ginger 6oz Noodles 1-2 Packs of Egg Tofu + Instructions: 1. Cook and drain noodles according to package directions. 2. Mix sauce: sesame oil, rice vinegar, peanut butter, soy sauce, honey, tahini, garlic, and ginger. Adjust to taste. Make sure peanut butter is mixed well into the smooth sauce. 3. Pour sauce over hot noodles and toss to coat. 4. Cut egg tofu into thin slices. Sprinkle with salt and pan-fry until crispy on both sides. 5. Optional: Top noodles with green onions and toasted sesame or crushed peanuts. + Tag or send me your pics of you try it! Good luck!
