I hope you are having a berry good week! I am going to keep the berry trend going with these easy to make bars. @thesoulfullproject sent me some different oat mixes to try and also some instant oat packets. All of the products are so clean with no added sugars. The best part about this company is their mission. For every product you purchase they donate a serving to a food bank in your region. I love a company that not only has an amazing product but is also helping give back to the community in such an important way. No Bake Double Berry Granola Bars: 1.5 cups four grain cereal @thesoulfullproject 1/2 cup all natural peanut butter 1/3 cup maple syrup 1 tsp vanilla extract 1/2 cup salt roasted peanuts chopped 1.5 cups freeze dried strawberries 1/3 cup dried cherries 1/2 tsp salt 1 scoop @vitalproteins collagen (optional) Method: Combine all ingredients except for dried strawberries and cherries in large mixing bowl. You may need a little extra peanut butter depending on how thin your butter is. You want the mixture to stick together. Lastly stir in both berries. Take an 8 by 8 pan lined with parchment paper and pour mixture into pan. Press mixture firmly down into the pan to form a single uniform layer- I find spraying my hands with some cooking spray and then pushing down the mixture works best. Then place another layer of parchment paper on top and continue patting down the bars for about 2 minutes. This step is key to keeping the bars from falling apart when you cut them. Place pan in freezer for about 1 hour and then take out and cut into bars. Remove top layer of parchment paper and cut them into squares. Place into air tight container and store them in freezer or fridge. Mine are not cut uniformly because I had some impatient little boys waiting for bites! These are totally kid approved!
